Answer
What does Gurbani say about humility?
In short
Gurbani does not list humility with the virtues. It calls it their essence, the thing the rest are made of. The clearest statement of what it means comes as a pair of lines in Sukhmani Sahib where the same person is described as the highest of the high and, in his own mind, the lowest of all. That is the definition: not thinking badly of yourself, but no longer measuring yourself against anyone. Gurbani is also clear that it cannot be claimed, since announcing you are humble is the one move that proves you are not.
Guru Nanak Dev Ji's line on Ang 470 is not encouragement. It is a claim about where the virtues actually live.
miThat neevee naanakaa gun cha(n)giaaieeaa tat
Sweetness and humility, O Nanak, are the essence of virtue and goodness.
Tat means essence, the distilled thing. Humility is not being ranked highly among good qualities. It is being called what they are made of, which is a much stronger statement and explains why Gurbani returns to it so often.
What it actually means is settled by two lines that sit next to each other in Sukhmani Sahib, and they have to be read together.
braham giaanee uooch te uoochaa
The God-conscious being is the highest of the high.
man apanai hai sabh te neechaa
Within his own mind, he is the most humble of all.
The same person, in the same breath. Highest of the high, and in his own mind lowest of all. Neither line cancels the other, and the pair rules out the usual misreading. This is not a person with a poor opinion of himself who happens to be well regarded. It is someone for whom the question of rank has stopped operating, which is why both descriptions can be true at once. Guru Arjan Dev Ji states the same relation as a rule elsewhere:
Ang 266.
Guru Nanak Dev Ji gives the everyday version, and it is about power rather than self-image.
hodhai taan nitaaneeaa raheh nimaananeeaaeh
They remain powerless, even while they have power; they remain humble and meek.
Powerless while having power. Humility here is not weakness, it is declining to use standing you actually hold. Guru Amar Daas Ji applies the same to knowledge:
Ang 441, where the target is the assumption of already understanding.
Gurbani also blocks the obvious cheat.
Ang 1329 states the mechanism plainly, and Guru Nanak Dev Ji's line on Ang 1330 makes it a rule: calling oneself sublime does not make one exalted. Humility is the one quality that cannot survive being claimed, and the verses seem entirely aware of it.
What remains is an instruction, repeated in almost identical words across many of Guru Arjan Dev Ji's compositions.
Ang 866. Be the dust of all. It appears again with a condition attached that is worth noticing: ੧
Ang 1102. Not become worthy and then approach, but become the dust of everyone's feet, and then come. And Guru Arjan Dev Ji names where it leads, which is not obscurity:

miThat neevee naanakaa gun cha(n)giaaieeaa tat
braham giaanee uooch te uoochaa
man apanai hai sabh te neechaa
hodhai taan nitaaneeaa raheh nimaananeeaaeh
