Answer
What does Gurbani say about caste and equality?
In short
Gurbani's case against caste is not made on fairness. It is made on a claim about what a person actually is: the same Light is in every body, so the categories people are sorted into describe nothing real. From that follows the instruction to look for the Light and stop asking about caste, the statement that God does not ask about birth, and the observation that Naam is open to all four varnas and to those outside them. The argument is metaphysical first and social as a consequence.
The foundation is laid in Kirtan Sohila, read every night, and it is a statement about what exists rather than about how people should behave.
sabh meh jot jot hai soi
Amongst all is the Light-You are that Light.
tis dhai chaanan sabh meh chaanan hoi
By this Illumination, that Light is radiant within all.
One Light, in all, and the light by which anything at all is seen. Nothing in those two lines mentions caste. They do not have to, because once that is established, the sorting has nothing left to sort.
The instruction follows, and it is put as a change in what you look for.
jaanahu jot na poochhahu jaatee aagai jaat na he ||1|| rahaau
Recognize the Lord's Light within all, and do not consider social class or status; there are no classes or castes in the world hereafter. ||1||Pause||
Two commands in one line: recognise the Light, and stop asking about jaat. The second half of the line closes the escape route for anyone hoping the categories at least apply later. There are no castes in the world hereafter.
Guru Nanak Dev Ji then states the social consequence without hedging:
Ang 62. Call everyone high, and see no one as low. He also disposes of the idea that birth measures anything worth measuring:
Ang 142, where the test proposed is truthfulness, which cannot be inherited.
Guru Amar Daas Ji addresses the person on the advantaged side of the arrangement, which is a different audience and needs a different sentence:
Ang 1127. And Guru Nanak Dev Ji reports what happens at the only assessment that matters:
Ang 1330.
The practical implication is stated repeatedly, and it is the one that mattered most in the sixteenth century. Guru Ram Das Ji writes
Ang 733, and Guru Arjan Dev Ji lists the varnas along with those excluded from them entirely:
Ang 300. The point is not that everyone is admitted despite their caste. It is that the question is never put.
Guru Amar Daas Ji gives the line that holds all of it together, addressed to the reader personally.
eiau kahai naanak man too(n) jot saroop hai apanaa mool pachhaan ||5
Thus says Nanak: O my mind, you are the very image of the Luminous Lord; recognize the true origin of your self. ||5||
You are the image of the Light. Not made equal by a rule, but already the same thing as everyone else, and the instruction is to recognise your own origin. Caste does not survive that recognition, in yourself or in anyone you look at.

sabh meh jot jot hai soi
tis dhai chaanan sabh meh chaanan hoi
jaanahu jot na poochhahu jaatee aagai jaat na he ||1|| rahaau
