Answer
What does Gurbani say about anger?
In short
Gurbani places anger inside the person, not in whatever provoked it. It is described as living in the body, as taking a person's judgement with it when it rises, and as burning the one who holds it rather than the one it is aimed at. It travels with haumai rather than arriving alone. The remedy offered is never to hold it down by force: it is cleared through the Guru's Shabad, and khima, the settled willingness to bear with people, takes its place.
In ordinary speech anger is something that arrives from outside. Someone was rude, something went wrong, and anger followed. Gurbani puts it somewhere else entirely. Guru Tegh Bahadur Ji describes it as already sitting in the heart, and names what it carries off when it rises.
kaThan karodh ghaT hee ke bheetar jeh sudh sabh bisaraiee
The heart is filled with anger and violence, which cause all sense to be forgotten.
What is lost here is not composure but judgement. Whatever a person understood a moment earlier stops being available to them. That damage is done before a word reaches anyone else, which is why Gurbani treats anger as the angry person's own problem first.
The imagery is unusually physical and it recurs across authors. Guru Nanak Dev Ji writes of
Ang 1043, and Guru Arjan Dev Ji uses almost the same figure,
Ang 759. Anger is not described as an event that passes through. It is described as a resident, something with an address inside the body. Guru Nanak Dev Ji also counts it among the stages of a life going wrong, where
Ang 137, and the verse does not say anger leads to harm but that the body itself is consumed.
That is the point Gurbani returns to most often, and it inverts how anger actually feels from the inside. To the person who is angry, the heat seems to be travelling outward.
aapanai roh aape hee dhajhai
By his own anger, he only burns himself.
Guru Amar Daas Ji says it again elsewhere and adds duration:
Ang 1415. Not a flare that passes, but something kept alight, with the suffering falling steadily on whoever keeps it.
Anger is also almost never named on its own. It arrives with haumai, the sense of a separate self with standing to protect, and Guru Amar Daas Ji makes the order explicit:
Ang 429. Read that way, anger stops looking like a temperament and starts looking like a symptom. Something has to be assumed first, that there is a self here whose position can be injured, before an injury registers at all.
None of this leads to an instruction to grit the teeth and carry on. The word used again and again is burning, and the fire is not willpower.
satigur sabadh karodh jalaavai
Through the Word of the Guru's Shabad, he burns away his anger.
Guru Nanak Dev Ji describes the same thing across a life rather than a moment:
Ang 1013. Tolerance is called wealth there, something gathered slowly, and the burning is credited to the Naam rather than to effort.
Nor is a vacancy left where the anger was. What fills it is khima, usually translated forgiveness, though it is closer to a settled willingness to bear with people. Guru Amar Daas Ji puts both halves in a single line, ੭
Ang 233, and the grammar matters: anger is dispelled and khima is grasped, in one breath. The verse is not describing someone who has become placid. It is describing someone who has taken hold of something.

kaThan karodh ghaT hee ke bheetar jeh sudh sabh bisaraiee
aapanai roh aape hee dhajhai
satigur sabadh karodh jalaavai
